Any Valve game that uses the Source engine would be multi-threaded now. I would guess most new games are now, but I can't say I pay that much attention to it. Joined Feb 9, Messages 1, Careful, almost every game these days is multithreaded.

Taking full advantage of multiple processors cores is a completely different story and IMO not a single game has really done it. Joined Jul 30, Messages Supreme Commander and its Forged Alliance expansion will definitely take advantage of a 2nd core For most of them thought, its still a matter of "higher minimum framerate" than higher average framerates.

Though that happens from time to time too. And it will certainly happen more often in the future now that we have the AMD powered 8 core consoles.

Ofc if the new game still uses an old engine then multithreading is unlikely. The most obvious example of that is Skyrim's 10yr old Gamebryo engine which uses about 1.
